The main difference between chili powder and the two spices we’ve covered is that chili powder actually comes from a blend of red pepper flakes. It’s also much hotter than cayenne powder—ours comes in at a whopping 160,000 Scovilles.
Once combined, I add half the same amount of the guajillo chili powder mixture as what the recipe calls for paprika.


When you’re making a dish where taste is more important than colour, hot sauce is a brilliant alternative to paprika. Just remember to choose one that fits in with your tastes or you may end up with something too hot or not hot enough.
To be fair, “cayenne” actually describes a group of hot pepper varieties in the C. annuum species. Cayenne peppers range from long and curly, to short and straight, and many in between.
